Corny As It Seems . . .

It's corn time at the organic CSA farm (Clagett Farm) I volunteer at and its early and sweet. What is not so sweet is the ever present silk. Sure, you can buy the little do-dads at all of the kitchen gadget coveting stores or even use a simple brush.

However, one of the best solutions I've seen in a while comes from Barbecue Tricks. This I would only use if I wanted to nuke the corn and not season it first, as I do when I roast it on the grill.  Take a look at the video below:


Best bonus ever? No dishes were harmed in the filming of this story. No need to break out the soap to save their dirty, little lives.

One day soon, I'll try a similar method when roasting, just to see if any cooking unshucked provides the same results.

What To Do With A Boatload of Daikon Radishes

Clagett Farm CSA has Daikon radishes as a cover crop, so we've got bushels of the long, white, crunchy veggie right about now. Add the bunches of Mizuna greens to the mix and we've got the makings of  great homemade Japanese salad.

I found this recipe - Daikon Salad (Radish Salad) | Salad Recipe | Just One Cookbook - on the Just One Cookbook web page. Some of the ingredients are optional, whereas several are pantry staples like sesame oil, rice vinegar, soy sauce and sugar. You may or may not want to add the fishy garnishes: salmon roe and bonito flakes.

The Plum Dressing calls for Japanese Pickled Plum (umeboshi) and Ponzu. I may just look for a bottled version of plum sauce at the grocer. Depending on my level of laziness this weekend, I may seek out the ponzu sauce ( a mix of rice vinegar, mirin, seaweed, and dried,smoked tuna. The Shiso leaves are optional so I'm going to leave that out.

With or without the traditional Japanese garnishes and sauces, this looks to be a quick and easy way to use the tasty radish.

It's Gazpacho Time

Today's share: corn, tomatoes, eggplant, okra, zucchini, peppers
We had a lot of cull heirloom tomatoes today at the farm (Clagett CSA). When they split or are really tender, they need to be used immediately.

No problem! I hobbled together a quick recipe from several favorites. Remember, all measurements are approximate since I'm an add & taste kinda gal.

 

What's On Hand Gazpacho

One pound tomatoes
1 green pepper
1 red pepper
1 cucumber
2 cloves garlic
Juice from 1 lemon
1 jalepeno
1 onion
1 shallot
1 T. Chipotle Tabasco sauce
2 tsp. Tabasco
2 tsp. Balsamic vinegar
2 tsp. Olive oil
2 tsp. Worcester sauce

You are supposed to blanch and seed the tomatoes, but being Ms. Impatient I just threw the whole bunch of roughly chopped veggies into my Vitamix and was done with it.

I'm amazed at how tasty it is- I barely could get it into the frig to chill because I kept, um 'tasting' it until a third of it was gone. I did not add additional salt and pepper. I can't wait to have this for lunch tomorrow.
